Crisp, thick white stems are topped by nutritious deep green leaves. This variety is perfect for baby choi for use in stir fries, braises and salads as it has a slightly more open habit than some pak choi varieties. This cabbage family member has a mild flavour that pairs well with ginger, garlic, chilies and soy. We use it constantly in our kitchens in spring and fall as it prefers cool weather.
